Meals

Week day meals are pretty simple in fare, quick to make and not to heavy. I will often prep meals in the early morning. I get a little more involved on the weekends. Making dishes that required the oven. We don't get home until after 6 P.M., like to eat within a hour of getting home. I've got other things to do, like sitting in my recliner with my feet up. Watching T.V., face time on Facebook and FB games. I am always wiped out by the time I arrive home. Day starts at 5 A.M., sometimes earlier if I wake up before 5 A.M., if I fall back to sleep it's a useless sleep full of dreams or I oversleep. I have to be up at 5 A.M., I've got this 5-7 A.M. routine down. I need it. Rolling out of bed half being leaving for work does not work for me. With an early start to the day and not rolling into the garage until 6 or so...it makes for a long day. Train travel and walking adds to the commute time and the day. And there are other things to be done. Dishes and son's school work. He is currently doing a charter school that allows him to work at home.  Much of the work is done in the evening with his Dad. Bless my husband.  While I'm dozing in my chair, he is finishing dishes or relaxing before starting the school work. It would help if I did not sit down when I got home. I actually don't until certain things are done. Getting out of the work clothes, taking meds., turning on lights and tidying up. Then I throw dinner together (it's more like supper).

This is what weekdays look like:

Mondays: Hamburger night. Cheeseburgers or sloppy Joe's
Tuesday: Soup night. 
Either Bear Creek soup or a good boxed soup or homemade split pea soup (mad in crock pot during the night).
Wednesday: Breakfast night. 
Scrambled eggs, toast or french toast.  
Thursday: Bean Night: 
Baked beans or beans and tortillas. Sometimes leftovers or sandwiches.
Friday: Hot dog night. Hot dogs or kielbasa. 

There you have. Easy and simple. Makes grocery shopping super easy. I almost don't need a list just a mental list (produce, proteins, dairy, grains, pantry, snacks, household, beverages and frozen).

Weekends...are for dishes that take more time or my son's favorites dishes. Stir-fry chicken with ketchup sauce, bacon-cheeseburgers pasta, one pot spaghetti, lasagna or baked chicken. Been wanting a roast...but whew the prices! Gracious! This weekend I made a casserole that is fun to make. Baked tacos. First time I used corn tortillas, flour tortillas worked better this time around. Also made Spanish rice, this batch turned out really well. For my Sunday morning breakfast I had tacos and rice. Yum! Sunday evening I am making Greek Chicken, as I am typing this I just thought a cucumber salad would be good on the side, no cucumbers in the house. Greek chicken with french bread and some other kind of vegetable.  I also want to try a new cornbread recipe called Custard Cornbread, that I'm going to save for later in the week or next weekend. If I can prep it in the morning and have my son put it in the oven, then I will make it otherwise it will have to wait.

Okay now that I am hungry, really hungry...I'm off to make some Greek marinated chicken, have a bit of red wine and french bread.

P.S. the marinade smells wonderful. Nothing like the smells of lemon, garlic, oregano and olive oil. Add Greek yogurt to the mix....oh the aromas!

My personal feeling at this point the pandemic is the crisis is over or close to it. At least where I live. Time to get back to normal, not ...
